I adapted the recipe from Bon Appetit's August 2023 issue - the original calls for grilling kale alongside the beets, but I wanted to use the attached beet greens instead. Because these aren't as hardy as kale and I didn't think they'd hold up to grilling, I sautéed them with a bit of salt on the stovetop. While this was quite tasty (and introduced us to Lao Gan Ma chili crisp!), the need to roast, grill, and also use the stovetop made this a bit more involved and lengthy than what I usually have time to cook these days.
