January felt like it was 8,000 days long and I can't believe it's finally over. We ran the gamut of bizarre weather this month - it was super cold, below freezing for a few days and now it has been unseasonably warm. I don't know what's going on but I think I've worn every jacket I own this month.
Here is my monthly wrap-up of some of the things I was up to in January.
What I'm eating
I made this copycat Olive Garden Zuppa Toscana soup from Budget Bytes. It was excellent. I'm not a huge fan of kale so I used spinach instead and you couldn't even tell the difference. If I made it again, I would probably slice my potatoes a bit thicker so that you really get that potato texture. I used a mandoline and even when I adjusted the blade for the thickest slice, the potatoes were still pretty thin. I also thought I was being clever by using spicy sausage so the soup would have more flavor, but it ended up being incredibly spicy. I still liked it though, but something to consider in the future. I'm continuously blown away by the fact that you can take water and some other ingredients and make a yummy soup that tastes nothing like water! The magic of cooking.
What I'm watching:
I watched the Netflix movie Society of the Snow and loved it. This movie was so good. I saw Alive when it came out in the early 90s but this movie added so much more to the story. The clothing/costumes were great and so was the cinematography. The scenes depicting the plane crash were crazy and it really felt like we were on the side of a mountain. I also really liked the way the movie honored and told us the names of all the people who died. I feel like other films don't really do this. You should watch this movie if you haven't!
