These are all the ingredients I put in our dinner last night (there are some out of sight too). It might seem like that's a lot but it was faster to prepare it than it was to sketch it all. The dish has a layer of grilled eggplants (aubergine), a sauce of tomatoes, onions, carrots and zucchini and a topping made with tofu puréed with soy sauce, lemon juice, mustard, and almonds. We served it with garlic bread…yummy!
