I actually find this bag (and the camera bag style in general) pretty cute. The hot-stamped logo on plain leather as well as the monogrammed coated canvas both look good. BUT. I don't think that they are fully hand-sewn. This is an important distinction from their "grail" bag, the Rejane, and the like (I wanted to inspect a Cabotin but it was no longer on display wherever I went).
First tipoff is the price. The canvas one is 1650€ while the leather one is 2100€. The Rejane PM is 4400€. It just seems too "cheap" haha. Usually brands will have these "lower-priced" entry level items to attract younger customers, especially. So I wouldn't be surprised if these were a mix of machine and hand-stitching.
To me, the stitches attaching the zipper look machine-sewn. But there are areas where hand-stitching is more evident.
The top handle is possibly hand-stitched, because usually this type of handle is done by hand.
The reinforcement of that little flap on the middle top section of the front of the bag is most likely done by hand as well

This portion of the strap, the small leather piece that attaches the strap to the hardware, looks hand-stitched.
Now in their "BTS" photos, it looks like it's fully hand-sewn, but we have to remember that the photos only show a very small portion of the process, and it could be combined with machine-sewing
Something to note, though, is that in the description of the canvas version, it makes no mention of any stitching, much less saddle stitching (the primary kind of stitch used in hand-sewing), while these are mentioned in the leather version.
Factors that may have led to a "lower" price compared to their other bags:
- interior lining is fabric, not leather
- minimal edge finish (a lot of the bag's edges are sewn inside-out, which means there's less labor/time working on painting the edges since they're not visible outside but hidden in the lining
- relatively "simple" construction for both bag and strap
- less hardware
This is just me guessing, so take from it what you will. Either way, it's a seemingly-well-made bag at a "friendlier" price point
