August was a bit of a weird month. We had a heat wave in the middle of it that lasted for about a week. I know 90 to 95-degree weather is not considered that hot in a lot of places but when you don't have air conditioning, it is a bit stifling. It was hot and it wasn't really cooling down at night which made it difficult to sleep. Every day I would come home from work and sit in front of my fan and do nothing, just trying to cool down, until it was time to go to sleep. The week was kind of a blur and I can't tell you much of what happened. Then, about a week and a half later, it had cooled down and we had thunderstorms. Like I said - weird.
Other than the crazy weather, here are some of the things I got up to in August:
What I'm eating:
I've been doing a lot of cooking and meal prepping, making food to eat for lunches and dinners. I get a lot of my recipes from the Budget Bytes website. I've made this Chicken and Gnocchi recipe - it was really good although it was very pungent. When I would take the lid off of the container the leftovers were in, you could definitely smell it. I also made this Spinach Tortellini Skillet. It was delicious as well, although I had thought I misread the recipe and included way too much tortellini because when I added the pasta to the skillet with all the other ingredients, the skillet was almost overflowing. There was so much pasta and I can't believe it was only four servings. Honestly, it probably could have been portioned out into eight servings.
My other go-to recipe is brussel sprouts, potatoes, and sausage, roasted on a sheet pan. It is so easy to make and so delicious. Even though one of my co-workers called it a "fall recipe" (I guess because it's kind of hearty and cozy?) I would eat this any time of the year.
What I'm watching:
I never got into the phenomenon that was the television show Lost. It came out during the time that I was in law school when I had so many things to think about other than television. I had known about it and had always wanted to watch the show but I always felt it was such an undertaking because there are so many episodes. But a couple of weeks ago I decided to start watching it and I am completely invested in this show now. I've watched all of season 1 and am now on to season 2 and I need to know what happens to everyone! I vaguely know what happens at the end of the series because it was all that everyone was talking about at the time, but I am excited to see what happens throughout the run of the show.
What I'm enjoying:
Every month, on the first of the month, I download a new free computer wallpaper from The Everygirl. I love these backgrounds. There's just something about opening my laptop and seeing a different colorful background every month. I love the ones that have the name of the current month sprawled across the image; just another reminder of where we are at in the year. I usually go for an image with flowers or some sort of scenic view and I enjoy scrolling through all the backgrounds, looking for the perfect one to catch my eye.
